About A2 Bilona Cow Ghee

Aarviyon A2 Bilona Cow Ghee is made the long way, on purpose. Milk from indigenous Indian cows is cultured into curd, hand-churned with a wooden bilona to separate the butter, and then slow-cooked over a low flame until it becomes ghee. Roughly thirty litres of milk yield a single litre.

Most commercial ghee is made by melting cream directly, which is faster and cheaper but skips the culturing stage entirely. The bilona method produces ghee with a granular texture, a distinctly nutty aroma and the digestibility that Ayurveda associates with it.
